Sausage Stew and Homemade Bread

Last year a friend gave me this great cook book Zhoozsh! Faking it by Jeremy & Jacqui Mansfield. Jeremy is a DJ for Radio 5 a popular station here in SA and I’d discovered another of his books in her kitchen and just loved the way he writes and things he come up with.

A couple of weeks ago I made the Avo and Bacon Pasta and this week I tried the Sausage Stew. Had to share cause I thought of the Borkowski’s allot, I think you’ll love this one guys. Recipe below:

I added the mini courgettes, there are no veggies in his recipe.

Home Made Bread

served with this delicious home made bread, well sort of. Dry ingredients was bought mixed already and I just added baking soda and yogurt:-)

Sausage Stew:
6 pork sausages, fry in a bit of oil until brown. (i used a non stick pan to avoid the oil) Once brown set them aside, in the same pan fry 2 peeled and chopped onions and 250g chopped up streaky bacon. (it’s easier to chop the bacon while still frozen)

When it’s all nice and brown add 2tsp of brown sugar, (i added honey), crushed garlic and minced chilli, (obviously omit if your making for the kids). Then add 2 tins of chopped tomatoes and 3 tins of your favorite beans drained. (i used borlotti, red kidney and cannellini and for fun added chickpeas too)

Chop the sausages into 2.5cm-thick pieces, add them to the pan and allow to simmer slowly for 25 mins. Just before serving, mix in 2 large Tbsp of freshly chopped parsley. Serve in bowls with freshly baked crusty break.
